 "steel or aluminum ?" 2010-09-21
By genia
Help needed. I'm very interested in purchasing this wok...I need to know if the wok ring is steel or aluminum

It will be used at college....using an induction powered cook top which does not work (heat) with aluminum....(non magnetic). Steel is what I need.

Anyone have this set?

thanks

"It's a Good Wok, but Awkward on the Stove" 2009-10-31
By K. Berggren (St. Paul, MN)
I have been using this wok for about a month. Seasoning the wok is easy. Just follow the directions included in with the wok. The Wok Shop also sends you an email with directions. Be aware that baking the oil covered work in the oven produces a lot of smoke and odor, so open the windows and get the fans going. After the seasoning, I followed the advice in the book Breath of a Wok and stir fried some pork fat with garlic, ginger, and green onions, then threw them away. This is said to remove any metallic taste. Food sticking to the wok has not been a problem. Although this is cast iron, it is a very thin cast iron... not like a cast iron frying pan at all. One has to be careful not bang it too hard or it may shatter.

The only problem for me has been getting the wok close enough to the burner flame. This isn't the wok's problem... it depends upon your type of stove. Using a wok ring on the gas burner grate raises the wok too high. There is no room for the wok ring on the stove if I remove the grate. So, I end up setting the wok directly on the burner grate, using one hand to hold it steady. It's awkward. I may eventually try a flat bottomed carbon steel wok as it would be more practical for my stove.

Other than that, it works great. It looks and feels like an authentic, rustic wok and it seasons easily. I just wish my stove were better suited to a round bottom wok. Consider the design of your stove burners before buying a round bottomed wok. They are traditional, but somewhat impractical on a western stove. Do not hesitate to call the Wok Shop ([...]) for advice about what wok is best for you. They are very helpful and will take time to talk with you. Happy wokking!

"traditional 14" cast iron wok set from the Wok Shop" 2009-07-13
By Eugene Heinemann
Good product, arrived in good shape and promptly shipped.

Included good instructions on seasoning the wok as well as some nice recipes. Shipped to Canada, no problems with Customs.

Only issue for me, which I knew up front, was the cost of shipping to Canada, which was as much as the wok set itself. I purchased it in spite of the shipping cost because that was the product I wanted and couldn't find anything comparable in price

even with high shipping costs.

"Great wok, but set has changed a bit" 2010-10-04
By J. Wang (Southern California, USA)
Apparently right now the wok set from China has changed a bit. The wok I got was a cast iron, thin, and definitely a "cast" process wok. I wish they kept the old bowl shape (like half a sphere); now it's more shallow bowl.

Also the wok ring doesn't fit on my old stove top, even when I take the original grate off and use the wok ring instead. You are supposed to put the smaller diameter side of the wok ring down on the grate (the picture shows the wok ring turned on the wrong side - the wide side is up, to accomodate the wok, and the small side down to sit firmly in the grate). Unfortunately, my grate size is 8", and the smaller diameter is 8", so it doesn't sit inside the grate. The wok ring needs to be 7.75" in order to fit. So now I'm looking for someone who has access to a metal shop in order to fit it for me.

The lid also changed. It is now a shorter lid, not as tall, and the handle is much smaller with a black handle. I like the old domed lid, but it's a personal preference.

It's too bad that China is in a rush to modernize, and more and more Chinese believe that the nonstick woks are their future. For people who are still debating, get this before it's gone. I live close to 99 Ranch Markets, and they stopped carrying traditional woks like these about 10 years ago, and most of the Chinese markets only carry nonstick woks, believing it to be superior.

You and I both know that cast iron or carbon steel woks are the best. Nonstick is not good for our health. My doctor determined that nonstick pans and microwaves are damaging my health (interfering with my reproductive system). Nonstick pans should only be used for low-medium heat for simmering stews. For those who are still debating whether to buy one or not, I highly recommend this wok set from the Wok Shop. This is a great wok, and I've seasoned mine today. Looking forward to better health and yummy food.

Personal note: 14" wok is really for serving 2 people. 16" wok I find is sooooo much easier to use because it's bigger, and the bigger real estate makes better stirfries, and it's really good for 4 people. When you overload the wok with food, there's really no room to move the food around and cook it. The guidelines that Mom taught me was: wok shouldn't be more than 2/3 full, preferably only 1/2 full, so you have plenty of room to do the cooking.

 "Wok Shop Cast Iron" 2010-09-25
By M. A. McIntyre (Shadow Hills, California)
Great product, great store. This is not your grandma's cast iron. These are very thin with a small amount of flex. If you dropped this it would probably shatter or crack. With a good heat source ( I cook outside over a turkey fryer burner) this gets very hot in seconds - you have to learn to control heat....but you will get wok breath....great wok, but not a starter wok.

 "Love this wok" 2009-11-14
By HWS (Ashburn, VA USA)
After the purchase of my last non-stick wok (over $100) that lasted about 2 years using only plastic cooking utensils, I decided to go for a cast iron wok. I've started purchasing Lodge cast iron products, but opted for this wok because it reminds me of the wok I used growing up. I'm very happy (and so is my wallet) that I made the decision to go with this one. For years, I've wondered why I can't get that nice loud "sizzle" when I first put my food in a heated wok, now I know. I've been using the wrong type of wok! Anyway I cooked fried rice in it after owning it for about 2 weeks and it was great. The rice stuck a little bit (since I was using oil sparingly), but the clean up was easy.

After a couple of uses with this wok, I noticed that my right arm would get really tired. I found out that it was due to the fact that the spatula was too long. I contacted the Wok Shop on the purchase of a shorter handle one. Funny, it felt like they were grilling me, but they were just making sure that I bought the right spatula for the size wok. After much discussion, they "let" me purchase a 14" spatula (it comes with a 17"). They wanted to make sure I didn't spend money for an unneccessary item. Funny, most companies will sell you anything, but the Wok Shop wanted to make sure the product was right for me before selling it to me. The 14" spatula works great and it's the right length for a short person that is closer to the wok when cooking.

If you're not sure what size wok to go with, I would recommend the 16". You can cook as little or as much food as you want in it.

 "It's Great!" 2009-06-09
By S. Eason (McKinney, TX)
I read everything I could about woks before purchasing this one. Everyone has a different opinion about material, size, heat source, etc.

I got this cast iron wok on the recommendation of a high school foreign exchange student from Fuzhou, China. Her mom uses one that is very similar.

This is definitely cast iron, but it weighs less than 3 lbs. I can hold it up by the handle with one finger. It came with some extra little goodies and that a surprise. Anyway, I seasoned it using the email I received as a guide. I used a Brillo pad to scour the whole thing and rinsed it in hot water. I used a thin layer of Crisco and baked it in my gas grill @ 350 degrees for 20 minutes. I let it cool and scrubbed it with a sponge in soapy hot water. I repeated these steps again. Then I coated it again and baked the wok @ 450 degrees for 20 minutes. My wok is now shiny black and nothing stick. The first meal I made was a simple chicken and vegetable stir-fry I got from a website. It came out excellent and every meal since then has also; even popcorn! Clean-up is hot water, soap, and a sponge. Couldn't be easier. Same for the spatula.

I have to confess now that I have a Whirlpool ceramic flat-top stove. After wok cooking on this stove over a dozen times using the wok and wok ring, I cannot detect any damage. I turn the largest element on high and go. I've also been using cast iron skillets on this stove top nearly everyday for 6 years and I really didn't think I could hurt it despite what I've read on the web about the dangers of doing so.

If I dropped and broke this wok today, I would have another one on order within 10 minutes. I will never be without one again.

Update: I have enjoyed cooking in this wok so much, I have invited friends and family to watch me cook in it and they have enjoy the results that come from it. I have ordered one for my son and his wife as an anniversary present and one for a friend as a birthday present because they wanted one so much.

 "Horrible Wok..." 2008-11-13
By "jon" (Bozeman)
This wok is terrible. We literally used it twice before throwing it out. After the first use, we noticed that a tiny flake came off the bottom of the pan. I used the bamboo tools that it came with... but I figured I must have done something wrong.

My wife started using the wok again about a week later when clouds of smoke poured out of it. She was just adding a little oil before the food went in! The fumes released by the pans turned out to be the non-stick coating releasing/melting/burning. You couldn't breathe! Gotta hand it to the engineers behind this one - a non-stick coating so effective it won't even stick to the wok itself!

Needless to say we turned on some fans, opened the windows, and went out to eat that night. I was actually really excited to get this as a wedding present last month, but ended up very disappointed. We ended up buying a new wok from BB&B with a mail-in rebate making the final cost [...]. Much heavier steel used, slick non-stick, works great.

So, two minutes of preheating with oil for a stirfry on medium-high heat and a small explosion and fire started, then once the flames were out and the billows of smoke cleared, the non-stick coating poured off. Not peeled, but POURED off Bad product. I bought a wok for stir-fry which requires a hot wok. I have used many woks at much higher temperatures, and never had this kind of experience. They were a much higher quality, but I would not expect this kind of reaction even if I paid $10 for it rather than the $30 paid.

Avoid at all costs. This product is dangerous. Directions were followed exactly!

This wok lasted about 3 weeks before the non-stick coating started to flake off. It is now unsafe to use for stir-fry. I still use it to boil water for a steamer, but that's it. Worthless junk that I would NEVER buy again, and I advise anyone considering one of these to not make the same mistake that I did.

 "NOT AS ADVERTISED" 2009-10-09
By G. Sciarretta
This is NOT a cast iron wok - it's is a carbon steel wok.

There are others like this here on Amazon for around $[...]. Cast iron woks are (get this-) cast from molten iron. They are thick, (usually at least 3/16 inch on the sides and over 1/2 inch on the bottom) and heavy and extremely ridgid. They heat up slowly and distribute the heat more evenly, reducing the likelihood of hot spots and uneven cooking and give you greater versatility than do the carbon steel variety. Carbon steel woks are good in their own right, but do are not used in the same manner as cast iron woks.

So, do your research before you buy. I took for granted the listing as being a true cast iron and now I need to go spend another $[...] for the one I need.

As for the accessories, the lid that came with mine was not the same as in the picture (polished stainless steel with a black plastic handle) and does not even fit the wok - it is 14 inches in diameter for a 16 inch wok?? I loose about 20% of my cooking area due to this. The bottom ring is made of thin punched metal. No comment there other than you get what you pay for (except in this case.) As for the spatula - I am certain the wood handle will fall out just like everyone is saying, but it is simple enough to pinch it into place permanently. Mine came with an extra utensil not advertised - a bamboo cleaning whisk. Nice for decoration, but not practical in a modern kitchen.

If you are looking for a thin steel wok, then there are others on Amazon that are better quality and less expensive. If the shipping and restocking fees weren't so ridiculous I'd return it. As it stands, I'll use this one when I need to use a traditional wok, and go get the cast iron wok I intended to buy in the first place.

[...]

Worse yet, there is no warning of the insane shipping fee until after you complete your purchase and get your confirmation email. I was lucky enough to catch it in time and change the shipping method, but I have read feedback from others who weren't so fortunate.

Lastly, be very careful to buy only from the guy with the 99% positive feedback and not the other guy. I'm not even going to try to leave feedback (I got mine from the guy with the lower feedback.) In his replies to customers negative feedback he has not only been rude, but has gone so far as to post their email, tracking numbers and even addresses in his replies. After I write this review I am contacting Amazon to see what can be done about that.....

"Another must have for camping" 2009-08-13
By Campinginstyle (VA)
This is a great wok. It's big and roomy for stirfrying veggies for a party of 20! It's great for salt and pepper crabs. It cooks the food evenly. It's also great for deep frying fish, eggrolls or tempura since it can keep the heat high - allowing you to get your food brown and crispy quickly since you don't have to let the food sit in the oil until it get brown.

The spatula that comes with the wok needs a lot of improvements. The handle is too short. The wooden handle tends to fall off suddenly since there's nothing to keep the wooden locked into the metal part of the spatula.

Make sure you condition the wok before you use it and make you dry it off completely after washing since it does

get rusty if left to dry on its own.

This is a must have for health conscious camper. You can steam and/or stirfry/ deepfry your favorite veggies/meat or fish at the camp with this wok. It's easy to clean and so versatile that all you will need is this wok. You won't have to bring extra pots/pans on your next camping trip.

"bad cast iron wok - porosity" 2010-06-22
By joe (midwest)
i had this wok over two years now.

i followed instructions that was instructed and followed emails received from the wok shop, but no matter what I did, seasoning just failed.

i followed all the directions, you know clean the wok out, get rid of machine oil, etc. stovetop method, oven method, etc you name it.

the seasoning would not hold to the cast iron, i believe the wok i received was bad. the porosity of the wok is so high, the the hydrocarbons which is the patina or the seasoning that holds to the wok did not stick to the iron.

at one period all i cooked was just meat and fat, and the wok continued to bare its metal as the seasoning wore off.

in addition the wok had a lot of open pores, and after seasoned, the pores still showed.

fyi, i dont use soap, harsh detergent, i know what im doing.

i even had a local Chinese restaurant attempt to season my wok, and they said its no good. basically they said "its bad metal, its garbage"

so for the last two years attempting to season this crappy wok, it was futile, wished i got my money back, but i cant.

overall the wok shop was helpful and everything, but they given me a defect product. so i rated the product 1 star

 "Just what I wanted" 2010-05-05
By S. Anderson (Coeur d'Alene, Idaho)
This Wok was exactly what I wanted. I wanted a cast iron Wok but I wanted it to be lighter in weight than the traditional Lodge-type cast iron pieces. I seasoned this exactly according to the email directions I received and I have to say that it performed perfectly the very first time used! Non-stick qualities (after being properly seasoned) and the food was just perfect. I still can't get over that a NEW piece of cast iron didn't have a problem with sticking even when I added cooked, Udon noodles to the stir-fry. I added about 3 tablespoons oil to a quantity of about half full. I'm so happy I chose this Wok.

 "So impressed!" 2010-03-03
By S. Judd
Wow is all I can say. I received this over the weekend well packaged with some nice bonuses (perfect instructions on seasoning, a nice recipe book, a wooden spoon and a back scratcher...works good!)direct from The Wok Shop from whom I ordered from. The seasoning could not have been easier. I scrubbed the heck out of it with some super grease cutting foaming Dawn along with a little shake of some Bar Keeper's Friend probably about 4 times on each side and on the handles with a non scratch sponge...it was clean (although REALLY gray soap still coming off) and my arms getting a bit tired. If you are going to jump into the seasoning, be sure you have time to do it all at once because mine started rusting on the underside as I scrubbed the opposite side...it happens fast! I had the oven preheating while scrubbing so it was ready set in the oven to dry well before oiling it when I was done scrubbing. I then oiled it up with a dry cloth with vegetable shorting (Alton says that's the best and works well on my other cast iron...all it's really good for) and set it in the oven as instructed. I then took it out, washed it with soap lightly again, dried in oven, re-oiled and baked again. I repeated this process probably 4 or 5 times total since I was home and had the time. It just kept coming out of the oven more and more beautiful. It turns a deep, deep kind of chocolaty, mahogany, coppery brown bordering black and the brush strokes and crackle lines originally there are still visible as another reviewer noted. This is just a beautiful piece. I'd like to find a place to display it when not in use as it seems a shame to tuck it away in a cabinet. I have done one stir fry and it is the perfect non stick surface already. I also did a soup and pouring the stock in the hot wok, I was worried it may 'deglaze' my new seasoning and it didn't...it is there to stay and as long as no one drops it, I think this will be a family heirloom! Love it...thanks Wok Shop and Amazon! PS...highly recommend the hoak and chuan (spatula and spoon) to go with this. They are the perfect length and contour for the wok and are of great quality as well (once you gorilla glue the handles in place!)...you'll also find a cover useful. Just being in view, there will be a lot more wokking happening around here...got myself a high powered outdoor burner as well...can't wait to get that fired up with this...a match made in heaven!

 "Successfully seasoned" 2010-02-17
By P. Tong (Newark, CA USA)
I read one of the reviewer who said he sanded off all the greyish "coating". So I tried getting it off with scrub brush and steel wool, unsuccessfully. I decided to call the seller before using the sander. After calling the seller, I learned that you don't get the greyish coating off. I guess that's the color of the unseasoned cast iron. I couldn't see any oil or wax on my wok. Anyways, I scrubbed it well with the steel wool and scrub brush, just in case. Then I seasoned it with vegetable oil (refined soybean oil) twice. Once for 1 hour and the 2nd for 2 hours, both in the outdoor BBQ grill. The temp must be well over 300 degrees. Keep the wok upside down so that the oil doesn't accumulate in the bottom of the wok. Now it's black and beautiful and non-stick. I suggest you either don't season the outside of the wok or do it only once. I think 14" wok would have been too small. 16" is good for a family of 4.
